Thai-Irish head chef Brian Hill says he's taken inspiration from classic American diners, though the focus remains on house-made ingredients. Dishes include English muffin burgers (from B165), breakfast sandwich (from B90), spaghetti with spicy anchovy and breadcrumbs (B160) and the warm breakfast salad (B175).
